There's not a parent who doesn't wish that veggies would be the number one food of choice for their picky eaters.
And while there are some mothers who are lucky enough to have kiddos who gobble up their greens, a lot of us are not so lucky.
But don't despair, for here is yummy mummy Malvika Bishnoi Gupta with a delicious recipe for Spinach Blueberry Muffins. The recipe is also pre-approved and loved by her adorable toddler.

So these days, my toddler's favorite color is GREEN!
And that led me to try out this easy-to-bake muffin recipe that includes her favorite color & every mother's desire of adding those greens to the diet.
Enjoy baking & feeding
Spinach Blueberry Muffin:
1 bunch of spinach
1/2 bowl blueberries
1 ripe banana
1/2 bowl honey
1/4 tspn cinnamon
1/4 tspn nutmeg powder (optional)
2 bowls of all purpose flour
1 tspn baking soda
2 tspn baking powder
1 tspn vanilla extract
1/2 bowl butter
Milk for a smooth paste
P.S - You could substitute blueberries with blackberries, raspberries or cherries. In case none of the berries are available, adding more ripe bananas & honey will also work, as long as the sweetness is retained.
Preheat oven to 275 degrees and melt butter and set aside to cool.
Wash & roughly chop spinach & add banana, milk, honey and vanilla extract together in the blender. Blend until smooth.
In a mixing bowl of dry ingredients, add flour, baking powder, baking soda, cinnamon and nutmeg. Make a well and add the spinach mixture. Gently fold in blueberries.
Scoop muffin batter into muffin tins. Bake for about 20-25 minutes or until am inserted toothpick comes out clean.
Serve it lukewarm or cool to your little ones.
And there you have it, a five step process to getting healthy and yummy food in to your little one's tummy.
