Monday Munchies: Green and Kid-Friendly Pina Colada Popsicles

It's Monday Munchies Time and here is mother of a toddler and former marketing professional Shinta Simon with a recipe that your picky eater will love and we have a feeling that you might be sneaking in a lick or two, as well. Take it away, Shinta!

With the hot months approaching, and a picky eater at hand, how do you get your toddler to have her/his fruits and vegetable portions for the day? You make them a nutrient-packed popsicle of course!

Popsicles are easy and versatile and can be made with almost any combination of fruit and vegetable you may have at hand. Fruit-based ice lollies, yoghurt-based posicles, or the ever-popular chocolate fudgesicles, the options are endless. It goes without saying that they are incredibly fun and satisfying on a hot summer day. To add to the fun, you could make these in a variety of molds, such as animal-shaped molds. Here are a couple of our favorite popsicles that your child will surely enjoy, these are so yummy,

it would be hard to resist joining in for a lick or two!

Green Popsicles:

These sneaky treats taste great, and betray no signs of the spinach that is blended in.

Ingredients for 4 popsicles:

A handful of baby spinach

1 ripe banana

1 cup blueberries

¼ cup orange juice

Blend all together until smooth. Pour into popsicle molds and freeze until firm


 Blueberries can be substituted with mango, strawberries or any inherently sweet fruit of your


 You could add a teaspoon of chia seeds to your smoothies for their protein and Omega-3 fatty

acids content. Chia seeds have little to no flavor and absorb liquid quickly.

Kid-Friendly Pina Colada Popsicles:

Ingredients for 4 popsicles:

1 cup chopped Pineapple (or tinned pineapple slices)

3/4 cup thick coconut milk

1 teaspoon honey

1-2 drops Vanilla essence (optional)

Blend all together until smooth. Pour into popsicle molds and freeze until firm


 You can add orange juice for a more citrusy flavor
